Baby pumpkins

Mini-potiron Baby pumpkins have grown in full field before being harvested mature in September and naturally stored in a dry and airy  place.

Available in different sizes and packages, baby pumpkin is in our range from early September to the end of February. Of course, it is booked in advance by our caterers in consequent quantities and in specific sizes for Halloween and for Christmas and New Year's events.

It is also very appreciated by some chefs who use it as mini-soup tureens: they extract the flesh, cook it and pour back the prepared soup into it. A lot of other applications are dreamed and achieved by our customer artists.

Baby leek

Mini-poireau Description:  Thanks to its small size, baby leek, offering the same colour ratio than its bigger brother, has the advantage that it can be presented entire in the dish.

Preparation advice: Blanched in the water, it can be slightly cooked with butter.  Its shape also allows preparing lovely presentation in the Mikado game style.

 

 

Baby fennel

Mini-fenouil Description: With a white to pale green colour and its dark green leaves, the baby fennel offers a light aniseed taste.

Preparation advices: Blanched 5 minutes in the water, it is delicious with fish, but it can also positively surprise being braised.

 

 

Baby round turnip

Mini-navet Description: Baby round turnip offers a lovely round shape.

Cultivated under shelter or in full field according to the season, its colour is white with a purple shade collar, more or less present according to the lightning.

Preparation advices: It is delicious when blanched 5 minutes in the water and pealed.  Even its leaves can be consumed!

 

 

Baby chicory

Mini-endive

Description: Baby chicory is obtained from a rather original culture !  There are two steps in the process : a first step is in the field, where the roots grow and a second step is in the dark, when the roots are held tight to each other. The sparkling white leaves are the particularity of baby chicory.

Besides, baby chicory is very rich in elements such as minerals, trace elements, vitamins but also fibres.

Beyond its originality and its nutritional qualities, baby chicory is particularly appreciated for the tenderness of its young leaves.
